Wiley says it takes a lot of guessing to run a restaurant, trying to anticipate which foods—and how much—your customers will want every week. And, don’t do it for the money; it’s really a passion play. So, if it’s not Tex-Mex, what is Yelapa Mexicana? Wiley says it’s local, fresh, Equitorial Fusion with a Mexican influence.
